How far in a day depends on how much time you have and your own tolerance for driving. If I have 2 weeks and am going 1800 miles from home, then travelling 300 per day has me on the road 12 days round trip and not much time at the destination. When I have unlimited time and a general idea of the direction I want to go, then sure 300 a day is relaxing. I personally find 600 towing a reasonable number for ME. 800 in just a car.
The computer will compensate for the altitude in that the truck will still run right. (not too rich) It can't compensate for the loss of power that comes with less air to burn, though I have always had enough to get me over the hill.
Wind, as others have said you'll know it when it's too much. I haven't felt compelled to get off the road for wind yet, but it will probably happen eventually.
A key point is having your truck and trailer set up right so it's as stable as possible. Mine runs down the road with 2 fingers on the wheel, as it should. If the truck/trailer wants to bounce off the lane lines on it's own all day, makes for a longgggg day.
