The ONLY thing you lose is the TPMS, which many people don't like anyway. If you're going to be running with huge variations in tire pressure (maxed out with a camper installed or perhaps even running aftermarket wheels without TPMS, or aired down for off-road driving), having no TPMS is actually convenient.
Also, the Vortec (gas) engine trucks have higher payload ratings than the Duramax (diesel) trucks, since the 11,600lb GVWR isn't available with the gas engine (and the diesel adds an enormous amount of weight).
+1 - Lost the side airbags when we tried increasing GVWR past 10K. Based on our CC,6L and SLT Sierra Config, we couldn't add them back. We LOVE our new Sierra.... Go for it! It rides amazing (especially for a 3500)...
What was the build date on your truck? I just saw one today with both the AY0 (Air bags, single-stage frontal and thorax side-impact, driver and front passenger, and head curtain side-impact, front and rear outboard seating positions) and JFL (GVWR, 10,800 lbs. (4899 kg)) RPO codes, but it had a very recent build date.
