These days almost every manufacturer offers especially small trailers - Forest River R-Pod, Jayco Hummingbird, and Coachmen Apex Nano being a few examples - so if you don't want a microwave simply remove it and use that space for storage, if you don't want A/C remove it and replace it with a powered vent fan. I'd agree with others that with 2 kids you'd find a bathroom really useful but if you don't want to deal with a black tank you could simply remove the toilet and instead use a porta potti or hassock toilet in it's place. The shower / bath could also be removed, 'though I'd tend to think it easier to just leave it as is and use the space for storage or better still for drying out wet clothes. Certainly for the style of camping you're talking about having a good size fresh water holding tank would be beneficial and disposing of grey water can be simplified by off loading into smaller 7 gal Aquatainers just as I do.

I'd just suggest that any modifications be done in such a manner that they can be restored later when you inevitably decide to sell the trailer. ;)
