Seal as best you're able. In my experience, nothing which won't keep you out will keep them out (except a cat ;) ). Glue and multi-catch traps are good, because they capture them quickly, hopefully before they cause damage. Supplement with bait traps. I've never had a problem with dead mice stinking things up - they're small and dry out pretty quickly after they die. The smell comes more when they're around long enough to build nests and pee on things - hence the traps.
