I've owned my EU2000i for over ten years now and have experienced the same problem you describe with the stalling after running for a couple seconds but slowly getting better.
I've determined that when the genny is cold and the oil is less viscious, the low oil monitoring system shuts the engine off. As the oil slowly warms, the engine will run longer. 30*F is definitely cold enough for that to happen while using 10W30 or 40 oil. So two options are to either keep the genny inside and warm, or use a 0W or 5W oil in cold conditions.
