The problem with recommending something usually leads to personal preference.
I guess if I were to do it as a single guy or with my girl, and with my dog, and knowing what I know now about TCs, I would probably do what your doing in the 8-1/2' size with a small slide for the extra space to stretch out. Large fresh and gray/black tanks, solar, etc., AF, EC, NL, or BF would be the ones I would look at.
Then I would put it on a 1 ton short-bed, 4x4 diesel...or gas, four door something or other.
