You can buy the swing outs for the jacks ready to go or take a look at them and make a set the same specs but I buying buying a set is cheap enough.
Loading and unloading is a breeze with electric jacks :) I load and unload our Arcticfox 990 alone all the time.
Since I'm carrying the AF990 on a 2010 F350 PS SRW I see no reason you couldn't do the same with a DRW.
I had a guy make me a superhitch for towing. Basically he welded a second OEM hitch under the original allowing me to use the supertruss when towing my 4000lbs sawmill. I can't say it's even close to the capability of a superhitch but it does what I need it to do ;)
Does your wife intend to go with you when you fish and camp?
As for a camper how big are you? Personally the older campers (and some new ones) have bathrooms that are pretty useless. We had an Angler 9D and had to leave the door open to use the toilet. Even my wife who is 5'7" and 140lbs felt that was the best option and for me at 6' and 260lbs I can only tell you there were acrobatics involved ;)
We chose the 990 for a number of reasons but the huge bathroom (in comparison), large water and holding tanks, onboard genny and many other features sold us. We love it frankly!
