Use any pan with a lid. Put the pan over LOW heat and they will bake up. You can also bake cakes, fix pizza, pretty much anything you'd do in an oven with a pan that has a lid. You just make sure it's on a very low heat so the bottom will not burn, not like frying something. We've baked potato, made bread, baked cookies, and pizza in an electric skillet many, many times. We do a lot in the oven, but when we got our Dutchmen Sport Lite (in my photo in the above post), we had to figure out how to "bake" without an oven. We learned how to with an electric skillet.
Another use for the oven that no one has mentioned.....
Have you ever used your camper in the middle of the winter? The camper was all closed up, and you flip on the furnace? Well, the furnace can take a LONG time to heat the camper. We have on many occasions lit the oven and left the door propped open a couple inches so the heat could escape. It's a lot safer than instant heat from the stove top burners. It helps heat with the furnace much quicker. Once the camper warms up, turn the oven (or stove top off) and let the furnace continue working. It works great for INSTANT heat and an IMMEDIATE heat source .... especially if your not hooked up to electricity or may find yourself with a dead battery! The Oven flame is much safer than the stove top flame.
FYI, we use our oven in the camper a lot!
