Since you are asking for help on one thing, assist in getting your TC Jacks to run. Do your run your truck when using the jacks or any other high DC consumption device. If not, you should.
As mentioned before, a good audit of what your power consumption is, might give you an idea of how much solar watts you need. You might think you know what it is, but believe me it would be enlightening.

If you are using your TC from November 1 to March 31st for extended camping trips, it is a waste of time, tilting your solar panels.
Stick to vendors that supply RVs, like Arizona Wind & Power, Am Solar and Best Convertor. You can pay more $$ in some cases, but you will get a lot of intangibles, from those companies.
In the long run, it will be cheaper just getting a Honda/Yamaha Generator. I have an Onan and a Honda. No comparison, the Honda is considerably quieter.
Oh yeah. I love my solar! But I have lived without it too. But if you are only going out for long weekends or short vacations, skip the solar unless you have a big checkbook. Reading how to manage your batteries, better quality batteries, better charging technique, battery monitor, fresh batteries fully charged before leaving home and better power consumption habits/technique might surprise you how you are able to extend your House batteries.
