I like the floor plan, especially with it giving you a large back window.
I would be worried about putting a canoe up on top since the camper is already tall on your truck. Shoot, I would be worried about just the height of your camper.
Looking at the pictures, I have a couple of ideas that may work. Some depends on how much space you have. and your limits.
First thought was a 7' ramp. Could have be spring loaded on the bottom to assist with raising but also set up with a pivot to swing out of the way while in the up position for when next to another vehicle.
Second was a ladder type scissor step that would fold long and flat sliding under the camper from wheel to wheel. Biggest issue is the potential for the tire to damage the step when stored.
Third is a modified version of the second. Same basic concept, but have it pivot then slide so it goes over the forward belly storage box.
