Re the microwave - you don't really need a generator unless you go for a powerful one. Our microwave is a 1 kW unit which our inverter and our 4 AGM batteries handles comfortably.

We have a similar rig to MacHof and find that the 4 6V AGM's make it really handy when running your electric things when not on the grid. Any chance there is room for 2 more. Figure, the extra 2 are only the size of 2 cases of beer. We have 330W solar on one side of roof and room for canoe on other and so far, almost never run the genny.
Our fantastic fans keep us cool in hot weather but we really don't go looking for 100+, high humidity conditions when on vacation.
With canoe, your TC is going to be fairly high but getting the boat on the roof should not be that big of a deal if you are spry.
With the pop up, loading the canoe is easier than when we had our hard side. If you are not familiar with loading canoe on roof, I can give you some pointers.
