Correct me if I'm wrong but I don't think you'll find a GM 1500 model that seats 4 and has 1900+lbs of payload. Maybe the old HD edition? I think a 3/4 ton would suit your needs best, might get away with an F150 with the HD tow AND payload package but the are rare.
Yes, the GM Max Tow package will have payloads in excess of 2,000 pounds. If you can find a 6.2L, it'll pull like a freight train.
I pull my 27' TT, with similar tongue weight, and 6 passengers with my Max Tow and it pulls just fine.
OP, keep in mind that when calculating the payload usage, fuel is sometimes not part of that calculation. For example, GM does not include fuel when figuring the payload usage. Just something to keep in mind.
