Plugged into shore power and starting the truck...?

What if the TC converter has 2 input power sources in the case of being plugged into shore power while plugged into the truck's 7-pin with the truck running? I am diligent to not have this scenario...

Yup, even though your eyes tell you that "physically" the battery is not in the middle, ELECTRICALLY, it is.

It would be easier to visualize if the battery were physically wired in the middle, for sure.
