Power issue
I have a 2004 Fleetwood Pioneer and I am wondering if the power converter being bad would affect the hot water heater? No hot water even when plugged into power from the pole

Depends. Some water heaters need 12VDC. Standing pilot water heaters dont need anything but propane.
