is a Pilot now rated to tow a 5,000 lb. trailer? when I was looking at them, the 5,000 figure was only for a boat. a trailer was 3500 lbs.

That sounds like what they said for the 1st Gen Ridgeline... Maybe 2nd Gen too? I never looked at those. I don't think the Pilot (until 2016) has ever been rated for 5K.
3rd gen Pilots (2012-2015) are rated to tow 4500 if they have 4wd with no exclusion for what is being towed. 4th Gen (2016-) are rated to tow 5000 if appropriately equipped (4wd and additional tranny cooler - the Honda cooler is currently in short supply and very expensive for the new 9-speed transmission), also with no exclusion.
Honda also adjusted the language about use of WD hitches to make it clearer. Yes, you can use them on both 3rd Gen and new Pilots.
