We rarely use ours also. For longer trips, we put one of those free standing wire shelf things in the tub. Gives us about five shelves that are almost two feet wide to put cloths and pantry items on. Works pretty good. Cheap and easy as well.
But, removing the tub should be easy. Likely, you'll find plywood under the tub. And the same behind the molded walls. It wouldn't be too difficult to remove the tub and walls and put down vinyl flooring and wall paper or something to make it look decent. Then add whatever shelves you want.
