Non-metallic and probably non-ceramic, although some "experts" claim that ceramics are the best as long as they are not cold.

You are going to HATE the dust !
Most pads actually lightly touch the rotor so they are "clean", "dry" and "warm". On cold days, when you first start out, make sure to use the brakes lightly before you really need them. Same in wet weather. Occasionally, lightly touch the brakes to make sure they are dry.
