Get an indoor-outdoor electronic thermometer and put the outside sensor in the refrigerator. This way you don't have to keep opening the door, loosing what starts to cool down all at once, and then it has to start all over again.
Being out of level is not good. Do all you can to get it closer to level. And yes, it does take several hours if you are starting to cool a hot refrigerator.
