And they will probably tell you that is normal with the 5.0L, and if you didn't want it to do that then you should have gotten a diesel or a motor with turbos on it.
Again, every motor has it's pros and cons. One persons pro may be another persons con. To you, the pros of the 5.0L is that you don't have to deal with your fear of turbos, but a con of that is that the engine does not hold gears at lower rpms because it gets its power at higher rpms which means it needs to downshift to get there. The pros of the 3.5L Ecoboost is that it has plenty of power to hold higher gears at lower rpms, but a con to you is the turbos.
You chose the 5.0L for the pros, now you have to live with the cons. There is no perfect truck engine and it is a give and take on what is more important to you. If holding higher gears is more important to you then get the 3.5L Ecoboost and deal with your fear of turbos. If not, then deal with the fact that you can't hold higher gears at certain times when towing with the 5.0L.
