It's doing it because your engine does not have the torque required to hold that speed in 6th gear, simple as that. Your 5.0 probably develops peak tq at 4000 rpm...just a guess. When it shifts to 5th it raises your rpms closer to that 4000 range, thereby giving you more tq and HP both. My diesel develops peak tq 1600rpm if your gas engine developed peak tq earlier, like an ecoboost, you would be able to hold 6th longer.
