I wouldn't worry about the COG that much. When I put my 11' camper on my 8' bed it took about 500 pounds off the front axle, from 4,800 down to 4,300. So, I still had over 2 tons holding it down. No big deal. However, I'm sure it would have had a better ride with the COG farther forward.
As for your situation, are you talking about an 8' long bed camper or a 10' or 11' long bed camper. An 8' would certainly work. Most short bed campers are 8' long anyway. I carried an 8' pop-up TC on a Dodge 1500 short bed for a couple of years with no problems. If you are thinking something 9' or 10' or more I wouldn't do it.
I think the best option would be a short bed camper. It will likely have more storage out back in the overhang and be designed to fit your bed.
Really, if going to Alaska, I would sell the truck you have, buy a long bed, and then get at least a 10' camper just to have some room.
