Having 2 tanks will not eliminate the possibility of odors.
Use the "GEO" method of tank cleaning
as described HERE. DO NOT waste your money on useless chemicals.
When you dump the tank, make sure it is full to start with. Then add more water and dump again. You can add water with a bucket down the toilet. After you dump, refill with a gallon or so of clean water and add the materials for the GEO method.
If you have a sewer cleanout or dump station close to home, that's a good place to do a super-thorough wash out. Don't back up the line at the dump station taking forever.
Be conservative with your use of toilet paper.... no big wads. A lot of people use "special" RV toilet paper, but regular paper is not a problem as long as you use reasonable amounts.
You can conserve your tank space by using any campground toilets or showers that are available, assuming they are not disgusting and reasonably convenient.
