First let me say I have used the microwave as a handy place to carry cookware. I probably used it a half dozen times in the first full year of RV living and not once during the second year when I traveled alone. I rarely have hookups and do not like to start the generator just for the microwave.
I use the 3 burners almost every time I cook dinner and often for breakfast. In the morning one burner gets used for coffee water (melitta funnel/filter system), one for eggs and one burner for oatmeal or potatoes. I sometimes make toast on an open burner. For dinner, we often have a couple of cooked vegetables, a main course and maybe rice or pasta. All three burners are used and we still need to cook items in sequence.
If you mainly do 1 night trips, I can understand doing limited cooking. I would cook at home and bring meals ready to eat with just heating. I am retired. I did a couple of years of full timing. Now I tend to go out for 6 months at a time. I will be leaving early July and do not plan on returning until Christmas time. Most of that time will be spent in the western US in national parks, national forests, and remote areas. Water is my only limitation and I can get by with drinking, cooking and a daily shower with about 3 gallons/day.
