Yes, the 13' Scamp should work. Except for the Queen bed. One can be had with a shower, toilet, & stove top. Approximate weight 1200-1500; Hitch weight 100 pounds. Not sure if the approximate weights would be with shower & toilet or not. One would need to check for sure.
One can be had with wider beds in
a Deluxe model, which has Oak or Birch Hardwoods interiors. Custom hardwood interior Scamp features additional floor plans. But will be a little heaver.
Another option, an
Aliner or Chalet hard sided folding trailers. Beds are wide in them, with plenty of head room. One can get a shower as well. Costly new, but might find a used one.

Going Small....Check the
Little Joe & Ponderosa TTs. Very small, yet large beds; made in Colorado. Interior height is at 6'.
My son in law (6'3") rented a 16' Scamp a few weeks ago, he was able to use it just fine. Even sleep with our daughter in back bed which are pretty long, but narrow (more narrow than a regular full size bed). Rear beds are the same in 13' Scamps...head room is also same in 13' Scamps after 2005. Lower in 2005 & years before. Interior height 6’ 3”
They were towing it with a Hyundai Santa Fe (all wheel drive).
One doesn't stand too much in these little trailer (unless cooking inside). The folding Aliner/Chalet type have great center headroom.
:h Maybe an old fashioned teardrop would work as well (such as a
Little Guy Teardrop); or even a
RoughNeck ---- half a Little Joe. Should be great for boondocking in hard to get to places. Combine on with a easy to set up tent for changing clothes & a portable showers tent for showers and a easy set up shade awning over the back cooking area (teardrop style) or use tent for cooking if not set up out doors.
Should have roomy beds (maybe for you) at least wide (maybe queen size beds). Easy to tow & store. Never actually seen a RoughNeck nor a Little Joe, but they seem neat. Little Joe is based on (uses the forms) from a fiberglass TT made in ABQ (New Mexico) for a short time. Called a Lite House. Sometimes they still come on sale. I saw a photo of a 1996 Lite House Trailer on Fiberglass RV Forum.
There are several teardrop trailers manufactures it seems. Many people make there own from plans. Often teardrop trailer show up on craigslist.
One can find several bed configurations with
Casita TTs, not sure in 13' or not. Casitas are normally a little heavier than Scamp & with less headroom, however.

Pop Up Trailer, might find one that would work. Draw back would be part of it is a tent.
Lightest of all Chalet A–frames — base weight of 1150 lbs. Most affordable Chalet. Can be towed by most automobiles. Easiest Chalet to maneuver around campsites and parking lots.
LTWThis one might be light enough
Chalet XL 1920. Very lightweight low–profile towing — 1995 lbs dry weight — tow height equal to that of small SUV, crossover or minivan. But cutting it close. Too close, I would guess.
You should find something (TT) with everything you asked about, except the toilet/shower.
Headroom may not aways be a tall as well. Except the A-Frames.
