Going against the grain sort of here.
Yes, a 2500 of any flavor would haul a ligh popup camper and tow much more than your boat handily with virtually zero modifications. Yes, you'll be loading up any half ton up to or over its printed payload capacities pretty quick. (Not unlike what myself and MANY others do all the time with every model of truck out there.)
If given the choice, I'd go 2500, especially if this setup will see frequent use.
But, if this is a year round daily driver and occasional camping rig that you're willing to put decent tires and a little work into the suspension, then a half ton May stil be the right choice.
Figure 5000lbs as a rough up limit for any half ton truck rear axle loading (unless you get the new Titan or a F150 with the heavy rear axle, the 2 I can think of that have or had heavier duty rear axles). If you can reasonably stay at or under that and are putting most of your miles on empty with this being a weekend warrior usage, then the 1/2 ton will work.
The other subjective part is how it will handle to YOU. Example, I'm good with the rock n roll of my 2500 with a big camper. Others wouldn't drive it out of the parking lot for fear of tipping over!
