The simple answer to your question you see lots doing it, is because they run over the GVWR of the truck (how do you think I tow 11,000#, with an 01)!
That said GVWR is just one factor there is also tire and axle ratings. Up until 2013 RAM 2500 and 3500 were the same with the exception of springs, and SRW or DRW.
In the case of my 01 they didn't make a 3500 SINGLE Rear Wheel, they had a 2500 camper Package, that included the 3500 rear springs and sway bar.
While I exceed my GVWR, I am well within tire and axle ratings, I have no need for for bags as I tow level and the springs don't get to the secondary overloads.
This is a personal choice, and can't recommend for others, just answering your question.
