I think your best bet is to visit as many RV dealers as you can. Spend some time in each pretending you are doing the things you would normally do. Take notes and pictures. A few of our ideas would be a slide out for more room. We would make sure you can still use the potty room and kitchen with it closed. DW likes a permanent walk around bed. Enjoy the hunt and above all have fun.
I definitely enjoy looking! I've been to 5 different dealers and 2 RV shows in the last month.
Unfortunately that's part of my problem, because of the overlap of models, they're all almost identical. Bunks in the rear, queen up front, slide with a dinette and couch. That's why we're looking for something to set it apart, a different floorplan, unique setup.

Your wishes almost describe our Bullet to a tee, except we don't have an outdoor kitchen (we do have Aussie grill on bumper). Ironically the two other models we looked at had outdoor kitchens, which made it more difficult to select the Bullet. Although we are absolutely sure we made the right decision. Just the color of our TT sets it apart from the plain Jane white ones. We have a nice big window on the entry side, which we can look out while sitting at the dining room table. Oversize bunks are big enough for adults.
The Bullet's are great, their ceiling height is on the low side, but there is a dealer close by who's been nice to our family in the past (we have MANY RV's in the family).
A Hybrid trailer would really suit our needs perfectly, but my Fiance doesn't care to sleep under the canvas, and after my many nights in a pop-up growing up, I agree somewhat.
