This could be the problem. You are working in Iowa with Texas plates. Maybe the officer has seen your truck before on the same route. I don't know about Iowa but here in Colorado the rule is if you are living in the state more then 30 days you are supposed to get Colorado plates. Of course that is for permanent residents, not people working here temporarily.
And that part of needing to keep a log book if towing your RV makes me wonder if he knows the rules. Hope you can get it resolved.
