If you have a ceramic coated grate do not over heat it as it damages the ceramic coating. The damage occurs because of the cast iron under that coating expands and contracts at a different rate than the ceramic and can crack it over time repeatedly over heating it. Now, if you have uncoated cast grates, why is that any different than a cast iron pot or pan? You want it seasoned so why burn off that seasoning? Again, don't over heat your grate. Let alone burning off the seasoning it will burn out the carbon in the steal and make it brittle. repeated over heating will crack the grate. A good wire brushing after and before cooking when its at cooking temp should be good. Sometimes I will take a scraper to the bottom of mine to get build up off, but that's all I do to mine.
