What the mfgs are saying, to put it in practical terms, is you can hand a snowplow off the front or put a camper in back but don't do both at the same time.
Additionally, the gvw ratings are also not necessarily a reflection of the vehicles' safe operating capacities but that of legislative limits for vehicles of a certain weight class.
