If you are worried about the hills/mtns, I'd go with the 4.10. I had a 2500 with a 6.0 and 3.73 and regularly pulled a 4000 lb trailer and found it shifted a lot going up moderate grades.
The gas mileage is going to be bad either way, but it won't be as hard on the transmission if you have the 4.10. On a good day, my 2500 with the 3.73 would do 15 mpg empty even with a K&N and more open exhaust. It did about 9-10 pulling the trailer. You'll probably get 8-9 most of the time with the camper.
