Because you want to pay LESS for a stripped-down truck, not more. It's all about economy of scale, taxes, and regulatory fees. A small-volume manufacturer producing basic trucks would have to charge 2-3 times as much for the same thing that Ford could build, just to keep their heads above water. End result is a Brand X stripper truck costs just as much to buy as a loaded King Ranch.
You see this with RV manufacturers all the time. These little startups produce niche market "basic" campers for the "why don't they" crowd. They always cost as much or more than a much larger and fully-appointed camper from one of the major manufacturers. Where do you think the buying public goes?
For the dealers, the stripped-down trucks just sit on the lots costing them money while they wait for that one grumpy old phart who still adheres to the "more to go wrong" mentality to come along.
The American buying public by and large wants the most for their money. If they can get a 20' pool for the same price as a 16' pool, they will go for the 20' pool even though it may only last half as long.
