For many decades it was possible to buy simple basic trucks everywhere. Then the industry realized they could make a lot more margin by selling fancy trucks. After awhile many dealers stopped carrying anything but tricked out vehicles. "You can always special order one" they tell you.
For many decades, everyone bought a single cab truck. They were all over the lots. Now you don't see any of them. Do you know why? Because wants change, and now the vast majority of sales are crew cabs. You can still order a single cab if that is what you want.
Same is true with the change from bare bones trucks to highly optioned models. It is true there is a higher profit margin for both the dealer as well as the manufacture. But there is no conspiracy as to why there are no stripped trucks on the lots. Dealers want to move vehicles off the lots quickly. Trucks that sit and do not sell cost dealers money. Thus, they stock what current buyers find appealing and will move off the lot.
Not trying to be insulting, but most of those commenting here aren't the dealers target market. They want people who regularly change vehicles. Those of you (or me as the case may be) who either buy used or keep their vehicles for 5 or more years aren't who they stock the dealership for.
