My dad installed a window unit in a home-made camper he built many years ago. It did a good job.
He mounted his in the back of the rig so he didn't have to remove it while driving.
I believe his was a 6K unit. If you get a large A/C you may have concerns with the weight, especially bouncing down the road.
Make sure you reinforce the wall under the wall under the A/C if necessary.
Or, just remove the unit when driving.
