I have a chevy 6.0 6 speed but it's power numbers are close and the tranny ratios are identical. I think the ford 6.2 will be very adequate for what you want.
both the 3.73 and 4.30 will do what you are looking for. If I were you I would go with the 4.3. the reason I would go 4.3 is at 60-65 mph towing a high profile 5er the 4.3 will probably put you in 5th gear and hold it there for a lot of interstate driving. I'm thinking that the 3.73 will want to shift back and forth between 5th and 4th more on the interstate.
You should be able to hold the speed limit on pretty much any interstate grade if you want to push the pedal hard enough, don't cringe at the sound of a gas engine at 4500 rpm and pay for the fuel.
