I just got a set of x-chocks. So I still should use the plastic wheel chocks in addition?

Plastic wheel chocks are more likely to slip than the rubber ones, especially if the surface is smooth and wet. I use rubber wheel chocks with the X-chock. With that and the 4 stabilizers down, it isn't going anywhere.

Maybe i'm doing it wrong but i level side to side, use standard wheel chocks, one behind the back wheel/back axle and one in front of the front wheel/front axle, then level front to back, extend the stabilizer jacks and then put in/tighten the x-chock

I do the same. It is not wrong because it works just fine. :)

X-chocks work great for stabilizing the trailer, but as others have said wheel chocks are still supposed to be used. I know many dont use both and have never had a problem but last summer I did see one trailer that rolled off of the X-chocks and several feet down a slight incline. That camper said he never had a problem before. This year he was back and was using both. It is a good idea to retighten them once the trailer tires cool down. I usually check mine after about three hours.

That works as long as the site is close to level. Otherwise, the unchocked wheels will roll and the trailer will twist sideways and pivot on the chocked wheels. This happened in my pop up days.
There's one more thing to allow for: the wheels settling into the chock which can cause the TT to move an inch or two, putting your tongue jack in a bind.
If the site has a grade enough so that rolling when unhooked is a possibility, we pound the chocks under both right and left downhill tires with a mallet, then put the tow vehicle into gear and gently seat the wheels onto the downhill chocks. While the TV is exerting slight pressure, DW pounds chocks on both uphill tires. I put the TV in neutral, allowing the trailer to settle between the chocks before unhitching. My X-chocks are for stabilizing only (as per the manual), so we use four wedge chocks to prevent Rocky from rolling.

I get why you would use the standard wheel chocks as a safety back up in case the X-chock fails for some reason, but I don't buy that they add any stability. The X-chocks, at least on my trailer, removes any movement of the wheels. Adding wheel chocks, while probably a good idea for redundancy, will not do anything.

Again, the x-chocks instructions say you need wheel chocks. They also say you have to install them only after the trailer is leveled. How you are going to disconnect and level the trailer without wheel chocks?
