Thae name of the bay seperating Fort Walton Beach, Eglin AFB, Niceville, Destin, and Santa Rosa Island is Choctawhatchee Bay.
Choctawhatchee Bay is not only a beautiful body of water but a wonderful source of some of the best "bay shrimp" in the world.
Bay Shrimp don't have the hint of iodine taste (astringency) that often comes with ocean shrip. Bays along the oceans often have freshwater rivers flowing into them... making the water brackish instead of salty (and with much less iodine salts).
Always ask for bay shrimp when they are available.
