Another fast recepie, pescado a la Mexicana

You use your favorite fish (do not use Salmon will not work)

Prepare rice with some carrots, corn and peas, Herdez ensalada de vegetales can be used, without the liquid.

Slice a yellow onion in rings and fry in some oil not much oil, brown onions until caramelized, begining to brown remove from skilet.

In the same skilet heat a can of Herdez salsa casera or a can of Rotel diced tomatoes & green chiles (if you do not find the Herdez) to a boil and use two smashed teeth of ajo (garlic) with the salsa to scare away the vampires.

Cook the fish any way that you want althow done in a frying pan is better.

Serve the rice, fish with the onions on top and laddle some of the hot salsa on the fish, serve with slices of agucate (advocado) and slices of tomato, squeese a lemon (half a green one) on the fish and enjoy with hot tortillas.

This meal goes well with beer.

  • Mexicans are good at preparing fish. In Baja we liked to go out on a panga and often would catch 3 kinds of fish like dorado and sierra. We met some guys at a local restaurant and they cooked the 3 fish 3 different ways for us. Muy deliciouso.
  • 50 years ago (!), we were fishing for sierra in Mazatlan on a panga. Sierra is kind of like bonito.

    The guides would gut the fish and wrap them in foil with salsa and throw them directly onto a beach bonfire, turning the package often with big sticks.

    After maybe fifteen minutes, open the package. Scoop up smoky steamed fish and slather it onto a fresh tortilla!! Wow.
  • I have a cast iron skillet that I pre heat and when hot place the can of salsa casera and the fish and cover until done and serve, another way is to place the fish in a sheet of aluminum foil with the salsa onions and garlic on the barbque, another method is to use banana leafs place fish, tomatoes, chiles, onions, garlic on the banana leaf "you need two leafs minimum" fold in a square and use toothpics to hold closed, unless you cut the edge of the banana leaf to make a rope to tie the package and place on the side away from open flame or the hot coals.

  • The restaurants here used to prepare Pescado al vapor. White fish in aluminum foil with shredded carrots and celery in the foil. Some White wine as well. You place it in a cast iron pan. It steams in the foil. Very delicious.
