As others said, the KOA in SLC is nice. There is a shuttle to temple square or you can take the light rail train stop just outside the park -- 10 minute ride to downtown. There is also a jogging path/walking area just outside the back fence from what I remember.
If you are staying there, a visit to temple square is worth it. The Mormon Tabernacle Choir practices on Thursday nights and part of the practice is usually open to spectators. The Sunday morning broadcast is also open to spectators (is that the right word? hehe). Depending on the time of year, there are also concerts in the assembly hall building as well put on by groups from around Utah.
Oh, and the LDS church has a massive genealogy library. They will even sit down with you and help you get started. Many people from around the world visit the library.
Across the street from temple square is the new City Creek shopping center which is very nice. There are other concert venues in this area as well... the Utah Jazz NBA arena, Capital Theater, Abravanel Hall, opera/ballet, broadway shows, planetarium (laser pink floyd on weekends!), etc. Shopping at City Creek or The Gateway (movie theater here too).
If you end up in Utah Valley, I could suggest ideas too.
