3/8" refrigeration grade copper is standard with 45 degree single or double flare. For a valve, look for an AGA certification, it will be listed for gas. The existing unit should already have a flared end on the supply line, so I would buy the valve with 3/8 flare connections, then add a new length of copper to the new water heater.
