First time 5er needs advice

Apologies for a rather long post, but we need advice. We've been weekend tripping out of a very well equipped E-350 van for 25+ years and are ready to step up to something nicer. Our plan is to purchase a small fifth wheel to pull with a F250 turbo diesel truck.

Here are some basic facts about how we would use it:
- typically trip for weekends only. Leave Thursday or Friday and return Sunday
- spend most time in the NC Mountains - average distance about 150 - 200 mi one way
- would be used as a base camp from which to kayak, mt bike, and hike
- would carry kayaks and bikes on Top of truck - would not impede turning radius
- could possibly see extended cross-country trips in the future
- just Doug, Laurie and black lab for now, possibly grand kids in distant future 10yrs?
- we are physically fit and experienced towing large boat (26' - 5,500 lbs)

Here are some questions (and don't know if I'm even asking the right ones!)
- we have been looking for several months and like the Grand Design 303RLS
- is this too big (33') for weekend tripping?
- will we find difficulty maneuvering in National Forest Campgrounds?
- is this too much vessel for a first-time 5th wheeler?
- is there a typical "breakpoint" in size that we might want to stay under?
- it seems that all the nice rigs have tons of interior storage that we don't need for weekend tripping. Should we consider a smaller vessel?
- not sure what other questions to ask right now but would appreciate any and all advice!
