If you don't use it a lot, your plan will work, as long as you can rework your countertop and make it look nice.
My new coach came with a very nice electric ignition 2 burner cooktop made by Princess. There were two issues. One, they mounted it down in a hole (recessed about 2.5") and my coach was all electric with the exception of the cooktop. Having the 2 burner down in a hole, made it hard to use anything larger than a medium pan. The all electric coaches used an induction unit which was surface mounted.
I was able to remove my 2 burner unit, making my coach truly all electric and added a storage bay by removing the large propane tank. I used the piece of Corian that covered the propane cooktop to rework the countertop and make induction unit fit nicely.
Just be aware that the smaller 2 burner may restrict pan size some. Camping World has several cooktops for sale. You just need to find one that will fit your needs. The one I removed is very pricey, but has square edges, a glass top and flush mounts. So look for what will fit.
