Takes up too much room. Difficult to find a storage place for it when on the road.
Instead of carrying that appliance, I just adjust my cooking for the situation. I'm a fan of the convection oven, but I get what you're saying about the long pre-heat times.
During those travel times when I don't want to be bothered cooking after driving for 6 hours, I just have sandwiches or canned foods easily heated on the stove. Things that can stay in place until just before eating. My favorite quick food is tacos where I heat the previously cooked and flavored filling in the MW. Takes all of 15 minutes to prepare and be seated to eat.
When visiting venues that keep me out late, I usually have the slow cooker making something that's finished when I get home. I have one of those smaller cookers so it doesn't take up much more room than a toaster. It makes a much better meal than a toaster oven would, IMO.
Of course, it's all up to you and yours how you handle it.
