I put vinyl plank flooring in the galley. It works well, but the sub-floor moves and affects the seams on a floated install. If you do woof floor, you might have a fair bit of prep work to do including flex and uneven surface.
If I had it to do over again, I would do wood grain linoleum with full adhesive. It would hold on great, move well with the floor and clean up easy. The modern sheet flooring looks amazingly good nowadays. You are looking at $9 or so a yard from places like Home Depot.
