Instead of the interstates across Texas, at El Paso I would follow US 62/180, which passes some nice scenery (Guadalupe Peak and Carlsbad Caverns). Work your way east and south using any number of roads toward Beaumont where you pick up I-10 again. Secondary roads will be all good with little traffic if you steer clear of the big cities.
