I replaced the monitor on a 2000 Holiday Rambler Endeavor DP about 10 years ago. Unless someone responds that has done the removal on your exact or similar model, you are going to have to try to determine the steps yourself.
Mine was an old black & white CRT tube type. I had to remove some of the center console, move some wires, and remove the monitor from behind the dash as it was larger than the dash cut-out.
Since my old monitor was not in an ideal position, I covered the dash cut-out and mounted the new monitor where I could see it.
If you want a short cut method, consider mounting a thin plate on top of the old monitor followed by mounting a new 7 or 9 inch lcd monitor on the face of the old monitor.
