Pretty cool, better than the egg ring I made back in the early 60's so we could make egg McMuffins(with Canadian bacon).

I do this sometimes for the redhead girl when I make her ham/egg/cheese sandwich on an english muffin

Saw this...we have eggs and peppers.

The wife liked them (don't tell her where I got the idea, she thinks I am creative).

ONE SUGGESTION...use a pepper with a larger circumference. Our green pepper was rather large, the egg cooked quickly and evenly. The red pepper was smaller, causing the egg to be "thicker", making it a bit harder to cook.

As I look back at your picture, I notice a narrow pepper---cut thicker. I think my problem was the different sizes of pepper, not the actual size.

upon further reflection...me thinks the thickness of the cut should be relevant to the circumference of the pepper----
just make sure the egg fits.

I have found it's best to slightly cook the pepper rings first, the ham idea is neat, and put a bit of water in on veggie spray and cover with a lid to set the eggs.

Looks yummy and liking how you got the tops to set without overcooking :c

I put down a small piece of ham first inside the pepper ring than add the egg, tastes real good!

And I like 'my' eggs really done so when the eggs looked cooked I add a 1/4 tsp of water to the side of the hot frying pan and immediately cover for a few seconds. That cooks the top of the egg more.

I've made it for my campground friends and what was really surprising is their finicky kids ate them like crazy. One way to get a vegetable into a kid! :C

How thick are the slices of the peppers?

Peppers in N. Am. are capsicum in Australia.
