Pork minus the smoke

Every year my daughter gets to pick her menu for a birthday dinner. Tonight was dad's night to make it happen. She picked "stir-fry" as the theme and I get to run with the rest. I chose boneless pork country style ribs as the meat, marinated in char siu.

I slow cooked in the crock pot for 4 hours and then finished on the grill

Fired up the disc for the stir-fry

Ready to put on the feed bag

I get my char sui mix at World Market. I marinate over night and then put in the crock pot with about a 1/4 cup of marinate and a 1/4 cup of Coke. Half way through, I rearrange the meat in the crock pot. The meat is usually pretty tender at that point and just needs a little reverse sear to give it some color / marks.

No World Market by me although I've heard of them so I'll keep the store in mind for travel times. Interim, I'll just make my own (minus the red food dye; another quirk:D))but I'm sure the packet would come in handy when I'm missing an ingredient or if I'm cooking whilst camping. Thanks for the info and "food porn".

I had to google char sui mix to see what it was as I've never heard of it. I see it's basically Chinese bbq sauce; nice idea and great job as usual Dave.

  • Char sui...YUMMMMMMM! And the stir fried veggies so nice and crisp. Great presentation as well. Your DD is lucky person to have a Dad who makes her such a treat.

Do you make your own marinade or is it available in a bottle/jar?

Haven't made it with boneless ribs which is a BRILLIANT idea. I generally use pork shoulder AKA Boston butt which is easiest to find on my end.

Never thought to crock pot the meat and then grill. Probably as I can only grill outdoors during the summer :(.
Do you slow cook the meat in the marinade and does that replace an overnight marinating in the fridge?

I simulate indoor grilling by cutting the shoulder into 1" strips then place the meat on a rack over a half sheet or roasting pan. Roast in a 450 degree oven for about 20 minutes. Let the meat cool, thin slice it and into the FoodSaver it goes, ready for whatever and whenever.
  • HEY... My B/D is Nov. 14th.. That gives me time for me to get there and even help with the shopping..
  • OK, that was the last straw for me.

I AM moving to Sacramento. OMG all the good cooking you do.

Lucky family you have there! BTW, the stir fry looks just wonderful!
