Skillet breakfast recipe

I love to make breakfast when we camp, and DW appreciates it. I came up with this recipe that we both liked. It may look a little like the dog's dinner, but it is really delicious.

2 medium potatoes peeled and diced into cubes (about 1/2")
4 or 5 slices crisp bacon crumbled
2 Tbs. Olive oil
1 red pepper diced
1/4 cup chopped onion
3 eggs
2 Tbs. Milk or half and half
4 slices American cheese

Parboil the potato 3 - 5 minutes, drain and cook over medium high heat in cast iron skillet with oil. When they start to brown lower heat to medium and add peppers and onions. Continue to cook until onion is softened. Stir in bacon. Whisk eggs and milk (or half and half) until foamy. Lower heat and pour egg mix evenly over skillet. If necessary tip skillet to evenly distribute egg mixture. Add cheese in a single layer over eggs and continue to cook untill eggs set and cheese melts.

  • I think it should make a great breakfast,that will "stick to the ribs" I will try it ext trip. Thanks for sharing
  • Sounds delish! Will definitely give that a try. Sounds like that would be good with crumbled bacon or crumbled sausage.
  • We usually make this with the previous nights leftover protein, steak, burger patties or pork.
