1 pound boneless chicken breasts, skin removed
2 egg whites
1 1/2 teaspoons salt
2 teaspoons cornstarch
oil to cover bottom of skillet
1/2 cup unsalted cashews or almonds
4 green onions cut on diagonal into 1-inch pieces
4 tsps. dry sherry or wine
2 tablespoons soy sauce
1/2 pound fresh snow peas, stems removed, or
1- 8 ounce package frozen snow peas, thawed
Wash chicken under hot water. Pat dry. Cut into 1/2 inch cubes. Mix the egg whites, salt and cornstarch. Add chicken and toss to coat. Refrigerate, covered, for at least 20-30 minutes. Dish can be done in advance to this point.
Heat oil in a medium electric skillet. Add the chicken and quickly fry. Don't let pieces stick together. Cook for 5-7 minutes, until cooked through. Remove chicken to a plate.
Add oil as needed. Add the cashews or almonds and the green onions, and fry for 2 minutes. Add the wine, soy sauce and chicken to the pan and stir. Add the snow peas, stir to coat. Cover skillet with lid and cook until all heated through. Transfer to a heated platter. Serve with rice. - SwanInWAExplorerBEEF ORZO SKILLET
1 pound ground beef
1/2 a large yellow onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 cup chicken broth (or water)
8 ounces orzo
1/2 teaspoon Italian seasoning
Salt and pepper to taste
4 cups chopped kale or baby spinach
1/2 cup grated Parmesan cheese
1. Preheat skillet and cook beef and onions until beef is browned the onions have softened.
2. Add garlic and cook for 30 seconds, until fragrant.
3. Add tomatoes, broth, orzo and seasonings. Stir well.
4. Bring to a boil, reduce heat and simmer (covered) for 10 minutes, stirring occasionally until orzo is tender.
5. Stir in the chopped kale/spinach until wilted.

Lemon Pepper Scampi
Works nicely with any kind of pasta or rice. HTH - agteacherExplorerEasy treat. If don't like peanut butter, add a package of chocolate chips and make chocolate fudge. You can also add about 8-10 regular marshmallows cut into 4 pieces each.
Skillet fudge
2 c. sugar
3 tbsp. butter
1 c. milk
1 c. miniature marshmallows
1 (12 z.) jar chunky peanut butter
1 tsp. vanilla
In electric skillet combine sugar, butter, and evaporated milk. Set control at 280 degrees. Bring mixture to a boil. Stir constantly, boil 5 minutes. Turn off heat; add marshmallows, peanut butter, and vanilla. Stir until marshmallows are melted and peanut butter is blended. Pour into buttered 8 inch square pan. Sprinkle about a half teaspoon baking????? over the molasses.
Stir while it foams(just a few seconds).
Serve over hot biscuits that have been pulled apart.
Molasses like you have never tasted before.
